3rd bottle of this wine tasted. Looking back at my notes it is interesting that last time I tasted it was January 2012 and it almost did not move from my first tasting in February 2010. This time the wine moved significantly from primary fruity characteristics towards secondary tones from fermentation and mainly tertiary tones from bottle aging. Also food pairing changed a lot, this is more subtle and sophisticated rather than big fruit wine and thus requires more finesse food than big steak. :-) The wine is much more pleasant when compared to horrible Rosemount CS Shiraz tasted recently here, which I believe had not point in cellaring.
