VINIFICATION
The must was fermented in open-topped fermenters and hand plunged to extract the right amount of color and ripe tannins from the grape skins. The wine was aged for 12 months in oak, of which 25% was new, during which time the lees were stirred to accentuate the Pinot Noir character of the wine.
This was the second sample of Pinot and quite different from the first one from Alsace. It already had some aged tones, nicely complex bouquet with secondary tones of leather and vanilla, which were very nicely accompanied in the taste by wild strawberries. The wine got better and better after opening.  We opened the bottle about 3 hours before tasting and still at the end of tasting it improved.

  1. I think different labels here, but I'll check it out.

  2. I got the Cab Sauv 2003 from the same winery sealed under single piece cork. I will see how it is.
