Vinification
Hand sorting of the grapes before destemming. Prefermentive maceration for 6 days at 6ºC. Alcoholic fermentation in stainless steel tanks for 17 days at 27ºC to 30°C. Post ferment maceration for 15 days. Run off and malolactic fermentation.
Ageing
75% aged in French oak barrels for 12 months. 25% in stainless steel tanks.
This was definitely very nice example of Shiraz. Juicy taste with forest fruits combined with tones of lack pepper and black chocolate. Slightly more complex than the Carmenere tasted here, which had bigger body, but was more fruity than this Shiraz, which has also some leather tones and very nice velvety tannins.
