Vinification
Hand selection prior and post-destemming. Pre-fermentative maceration for 8 days at 6ºC. Alcoholic fermentation for 16 days at 27ºC to 28ºC. Post ferment maceration for 10 days. Run off and then malolactic fermentation in French oak barrels.
Ageing
80% aged in French oak barrels for 10 months; 20% in stainless steel tanks.
Very nice example of Carmenere. Extreme fruit accompanied by black chocolate and coffee tones. Very juicy and full new world style of wine.
