Vinification process
The harvest starts late, when the grapes are over ripe. A part of them is immediately vinified, the other part wilts till December; both the musts ferment in 225 litres barrels where the wine ages for 10 months.
Somehow this wine  feels like cross between late harvests wines and Vin Santo from Tuscany with neither of them showing dominance and rather contradicting each other.
