Vinification
Grapes were hand sorted before de-stemming. Crushed and run off after 8 hours at 10°C. Alcoholic fermentation was done in stainless steel tanks for 15 to 20 days at 15ºC to 18°C. 15% of the wine underwent malolactic fermentation in French oak barrels.
Ageing
15% aged in French oak barrels for 4 months; 85% in stainless steel tanks.
This was much nicer than the Chardonnay/Semillon blend. Quite round type of Chardonnay with creamy tones accompanied by very decent oakiness.
