De Stefani's 'Metodo Zero' uses an innovative wine-making process to preserve the natural fruit flavours. Temperature is very carefully controlled and it is kept as near as possible to zero degrees throughout the process. Also, a small amount of Pinot Noir is added to add richness and body to the wine.
Overall impression is that the sparkle is quite expensive for the value it deliveres. I would rather go to some CAVAs in this price range.
